Waitress

'Waitress' is one of my all-time favorite movies... not only for its visuals effects of mouthwatering pies with unique names (and fillings) like "I Can’t Have No Affair Because It’s Wrong And I Don’t Want Earl To Kill Me Pie": made of “Vanilla custard with banana. Hold the banana…” but more so because it shows how food can change someone's life. I could relate to Jenna while making her "Falling in Love Chocolate Pie" (pictured above) as when I met my husband I had the same perma-smile that would keep me up at night and I couldn't stop baking. There's nothing like falling in love...

Sunday Smunday





Come Sunday, I'm usually exhausted and often succumb to speed-dialing some mediocre Thai or pizza delivery. It's never that good and I'm left feeling unsatisfied and annoyed that I didn't make something myself. The fix: quick and easy and most importantly HEALTHY comfort foods! Baked Fried Chicken, organic mac n' cheese, roasted asparagus, and a light caesar salad with crushed (fat free) sour cream & onion chips for a nice crunch. Dinner in 30 minutes (take that Rachel Ray!) Easy, Breezy, Beautiful.


Chicken:
-I buy skinless, organic chicken cutlets
-dip them in egg batter (1 egg with a little bit of skim milk whisked together)
-dredge them in flour or else just put them right in kellogg's corn flake crumbs seasoned with paprika, salt and pepper
-Bake at 400 for 20-25 minutes

Mac n Cheese:
-I buy Healthy Harvest organic mac n' cheesee and doctor it up at the end
-prepare as packaged
-add low fat grated white cheddar cheese on top
-when I'm not pairing this with baked fried chicken, I often add a layer of bread crumbs and pop it in the oven (for a few minutes) to give it a nice bite
-using ramekins is also an easy tool for having a serving size

Asparagus:
-as stated before, rinse, pop off the ends, spray with pam and add sea salt. Bake at 400 for 18-20 minutes.

Caesar Salad:
-Rinse hearts of romaine, dry off, add low fat caesar dressing and crushed sour cream and onion pringles. I let it sit for a few minutes before serving so it's not too crunchy.

Accessorize it!





Setting a table is a lot like fashion: it's all about accessories. Since trends are constantly changing and your taste is (hopefully) evolving, small additions, like peacock napkin rings can really spice things up. These prices are hard to beat: Goblets at $6.95/piece, napkin rings for $6.00? SO recessionista! Finally, how about peacock picture frames used as place cards? If you're feeling extra generous, you can give them to your guests as gifts.

Made with Love







I was recently asked to bring dessert to my brother-in-law's Thursday night dinner before his wedding. Wanting to bring something light yet delicious for the bride, I decided to try Ina Garten's Strawberry Country Cake in the shape of hearts to symbolize love. I still need practice in the decorating area, but the cake was delicious (and was gone in about five minutes)!

If only I had kept this AnnieGlass Ruffle Pedestal ! It would have been beyond perfect.

Popover to my House (whenever you want)




I woke up this morning dreaming of the popovers and strawberry butter from Neiman Marcus. Wanting to give my brand new popover pan some action, I whipped together some ingredients, popped them in the oven, and let me just say, DE-LISH! Perfectly crisp on the outside and soft and gooey on the inside, these truly explode in your mouth. I added corn to make the meal more Summer-worthy. (Cranberry always strikes me as a Fall/Winter food).

Meal:

Cranberry Spiced Pork Chops, Corn Popovers and Roasted Lemon Brussel Sprouts
(Serves 4)

Four 6-ounce boneless pork chops

Rub:
1/2 T chile powder
3/4 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp dry mustard powder
1/2 tsp paprika
1/4 tsp salt
1/4 tsp pepper

Sauce:
3/4 cup jellied cranberry
1/4 cup apple cider vinegar
1/4 cup maple syrup
1/4 cup balsamic vinegar
1-2 tbsp of stoneground mustard
1 T honey

Combine the dry ingredients together and season both sides of the pork chops. Set aside to make the sauce.

Sauce:
Mix wet ingredients in a small sauce pan over medium heat. Bring to a boil and whisk until smooth.

Place pork chops on a grill (or frying pan), cover, and cook 5 minutes per side. Brush generously with glaze. Move to cooler part of grill and continue to grill, uncovered, until cooked through, brushing frequently with glaze, about 3 minutes longer per side

Savory Corn Popovers
*Can be paired with delicious honey butter

Roasted Brussel Sprouts
1 lb brussel sprouts
3 tbsp good olive oil
3/4 tsp kosher salt
1/2 tsp ground black pepper
2 tbsp fresh lemon juice

Preheat the oven to 400 degrees.
Cut off the ends of the Brussels sprouts, quarter, and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper. Pour them on a sheet pan and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly. Sprinkle with more kosher salt, the lemon juice and serve immediately.
