Jamie's Week Night Secrets:









My best friend Jamie is truly a modern woman! She works hard by day (always looking gorgeous as she runs around the city in high heels and dresses to important meetings) and prepares a beautiful meal by night for her loving husband.  How she does it? I have no idea but she did share a few of her best recipes with me and they are amazing.

Like Jamie, the meals are classic with a modern twist and are always reliable. (What more could you ask for from a meal or friend?)

Lipton's Onion Soup Meatloaf (with or without the peppers): this beats any meatloaf recipe I've tried.  For those of you who turn up their nose to the sound of meatloaf, give it a try. If you like burgers (veggie, turkey, or beef burgers), you'll like meatloaf.  Also, a fun addition, cover the meatloaf with a bit of brown sugar-it'll caramelize on top and it's amazing.  You can also use ketchup.

Baked Fried Chicken: Jamie's trick: Marinate the chicken in fat free katalina dressing.  It makes the world of a difference.  Dip the chicken in bread crumbs and bake at 350 for about 30 minutes (until done)

And don't forget about the old school side: Green Bean Casserole. (Be sure to use low fat cream of mushroom soup or low fat broccoli cheddar and skim milk).

Here's a menu to celebrate Fat Tuesday!

The drink: Pat O's Hurricane:



Mix 4 oz of amber or dark rum and 4 oz of Pat O’Brien’s Hurricane. Mix. Fill with crushed ice. Top it off with an orange and a cherry.

 
Shrimp and Sausage Gumbo:



Red Beans & Rice (prepare as packaged)



Shrimp and Oyster Po Boy's:




Cream Cheese Filled King Cake:



Cake:
2 1/4 teaspoons yeast or 1 package instant yeast
1/2 cup milk
1/4 cup butter softened (1/2 stick)
2 tablespoons sugar
1/4 teaspoon salt
1 egg, room temperature
1 teaspoon nutmeg g
rated zest of one lemon (1 tablespoon)
2 1/2 cups flour

Filling:
oz. cream cheese
1/4 cup sugar
1 teaspoon lemon zest
1 teaspoon vanilla

Icing:
2 cups powdered sugar
2 tablespoons milk
1 teaspoon vanilla colored sugars (green, purple and yellow)

1. Heat milk to 105-110 degrees in a small saucepan over low heat. Place milk in the bowl of a standing mixer, add yeast and stir to combine. Allow milk mixture to rest for about 10 minutes or until frothy.
2. Beat the egg in a small bowl and add to milk mixture. Then add 2 1/2 cups flour a little at a time, butter, sugar, salt and lemon zest. With the dough hook on low speed, mix until dough comes together. The dough will be slightly sticky, not too wet. If the dough seems very moist you may add up to 1/2 cup additional flour 1 tablespoon at a time. I suggest trying a little less flour as you will work some in while kneading. 3. Transfer dough to a lightly floured surface and knead for a few minutes until dough is soft and smooth. Place dough in a lightly oiled bowl and cover with a towel or plastic wrap. Allow dough to rise in a warm and draft-free place for about an hour, or until doubled in size.
4. Make filling by beating the cream cheese, vanilla, and sugar together with a mixer until fluffy then set aside. 5. Lay dough on lightly floured surface, punch down and roll into a 20" by 10" rectangle. Spread cream cheese mixture evenly on one half of the dough, then fold other half over to cover. Pinch dough together to seal in cream cheese. Make a ring and pinch ends together, the ring can be a circle or oval. Place on a parchment lined cookie sheet, cover loosely with plastic wrap and allow to rise for 45 minutes.
6. In 375 degree oven bake king cake for 20 minutes or until slightly browned. Remove from oven and set a side to cool. Add the bean at this point by making a small slit underneath the cake with a paring knife.
7. Mix icing ingredients together and whisk until smooth. Drizzle icing heavily over king cake, and while still wet, sprinkle with colored sugars.

Donate to the Victims of Haiti

My heart goes out to Haiti.

Do what you can to help those in need.  Here are some safe online organizations to help. Although I wish I could support all of them, I chose the World Food Programme which will deliver food to the survivors.

Medical supplies, water, clothing, search teams, etc are also greatly needed, so do what you can to make a difference.

Jacques Torres recently opened shop at Chelsea Market which finally gave me a reason to try his famous chocolate chip cookie recipe. Having my best friend in town from Chicago to help with the baking (and sampling) made the experience twice as nice. Thanks Chels! The only thing missing was 'Troop Beverly Hills'.
P.S You must refrigerate the dough for at least 24 hours for this recipe, so plan ahead. I promise it's worth the wait.

Piece of cake



They say that cupcakes are to the 2000's as Starbucks was to the 90's. In other words, a pretty major trend that you've most likely tried. Let's just hope that they don't become the next Krispy Kreme.

Minny's Chocolate Pie

One of my New Year's resolutions is to read (and finish) more books each month including some classics.  I just finished a quick read-'The Help' and absolutely loved it. It made me laugh, cry, and most of all hope that I would have been as brave as Skeeter to stand up for people's rights in those turbulent times and of course pursue my dreams.


Here is a Chocolate Pie in honor of Minny (without her secret ingredient).



If you're in a book club, this would be a wonderful snack to serve while you discuss the book.

Chili Part II

I try not to make the same thing twice for the sake of this blog, but on Sunday night after a long day of traveling, unpacking, and getting back to the swing of things, I couldn't help myself and whipped up my favorite pot of chili. It was exactly what I needed.
Last night I decided I wasn't in the mood for just plain chili (even though my chili is far from plain), so I added some ingredients I had on hand and it was delicious.
The meal: Chicago-style Hot Dogs with Chili Cheese Fries.



The bonus: it wasn't fattening

The trick: Hebrew National 97% Fat Free Beef Franks, baked fries, and low fat shredded cheddar
Preparation:  Hot dogs: prepare as packaged: I slice them down the center lengthwise (but not all the way through-butterfly style) and grill them on a grill pan on medium-high heat for 7-8 minutes.
Add them to your favorite hot dog bun (which I toast for 3 minutes in the oven)
Top with mustard, onion, pickle relish, tomato, celery salt, dill pickle and sport peppers

Fries:
Bake as directed (do not fry). Top with chili and low fat cheddar cheese


Entertaining idea:
Serve them in Porcelain Wrappers!

Brunch Essentials

Hosting a brunch is a wonderful way to gather family and friends for a casual and enjoyable meal to top off the weekend.  Whether you're serving bagels and lox from the local deli, pain au chocolat from the patisserie around the corner, or else a combination of your own cooking with store-bought delights, anything goes when you have the right serving pieces on hand.  Here are some my favorite:
